Capsicum Mayonnaise
Capsicum Mayo is another very simple sauce that will only take 5 minutes to prepare. Don’t be put off by the roast peppers. The Capsicum Mayo is very mild in flavour and a great accompaniment to a fresh crunchy salad.
And it’s just great on sliced ripe tomatoes as well.
A stick blender is a very useful food prep tool when you are hooked up to 240v. Or make the Capsicum Mayo just before you leave home and keep refrigerated.
Capsicum Mayonnaise

Ingredients
- 1/2 330g jar Roasted Peppers drained & chopped
- 1 tsp Crushed Garlic
- 1/2 cup Whole-egg Mayonnaise
- 3 tbsp Chopped Basil
Instructions
- Place the capsicum in a medium bowl and process with a stick blender until smooth.
- Add the remaining ingredients and process until smooth.
- Serve with a fresh salad or drizzle over tomatoes.
