Smashed Curried Baby Potatoes

Here’s an interesting alternative to traditional baked potatoes. While it takes just under an hour in the oven it’s very easy to put together. You could be sitting back with your friends enjoying a glass of wine and happy hour while the potatoes are happily baking away.

Korma is a very mild curry so most people would not find it too spicy.

Ingredients
  

  • 1.5 kg Baby Potatoes
  • 2 tbsp Korma Curry Paste
  • 1 tbsp Olive Oil
  • 3 Curry Leaves
  • 1 tsp Cumin Seeds

Instructions
 

  • Preheat the oven to 200 deg C. Line a large baking tray with baking paper. Place the potatoes, curry paste, cumin seeds and oil in a large bowl. Toss to combine and season with salt and pepper.
  • Arrange the potato mixture on the lined tray and top with the curry leaves. Roast for 35-40 minutes or until tender. Set aside to cool slightly.
  • Use a paper towel to gently crush the potatoes. Then place them back in the oven and roast for a further 10 minutes or until golden and the edges are crisp.
  • Serve with greek yoghurt.
