Zucchini Tarts

These Zucchini Tarts are easy to make and very tasty. Make them in your caravan oven or make them at home, freeze them and bring them along on your caravan holiday.

For a quick and easy lunch take a couple of Zucchini Tarts out of the freezer at breakfast time and they will be thawed out by lunch time. Serve with a simple green salad.

Ingredients
  

  • 1.5 sheets Shortcrust Pastry
  • 2 Zucchinis sliced into matchsticks
  • 1/2 tsp Salt
  • 1 tsp Olive Oil
  • 1 cup Thickened Cream
  • 2 Eggs beaten
  • 1 tbsp Fresh Parsley chopped
  • 1/4 tsp Pepper
  • 2 tsp Fresh Chives chopped
  • 1/2 cup Grated Cheese

Instructions
 

  • Preheat your oven to 190 deg C and line a baking tray with baking paper.
  • Arrange the zucchini on the prepared tray in a single layer. Sprinkle with salt & drizzle with olive oil. Bake for 10 minutes until softened and starting to brown.
  • Combine the zucchini, cream, eggs, herbs and pepper in a medium bowl.
  • Grease a small muffin pan. Cut circles in the pastry small enough to fit the base and sides of each muffin hole to make little pastry cases, then place in each hole. Pour the mixture into the pastry cases and sprinkle with cheese on top.
  • Bake for 20 minutes or until the filling has set and the cheese is a golden brown.
  • Serve with a fresh green salad.

Notes

Make this at home and freeze in individual bags. At the beginning of the day take the required number of Zucchini tarts out of the freezer and they will be thawed by lunchtime.
Great for lunch on the road.
