Taco Pies

If you can cook savoury mince then you can cook Taco Pies. Healthy wholegrain wraps replace unhealthy pastry. Taco Seasoning gives the filling a spicy kick and the Red Split Lentils adds fibre to bulk out the mince filling.

Ingredients
  

  • 500 g Beef Mince
  • 1 Brown Onion finely diced
  • 1/4 cup Red Split Lentils
  • 2 tbsp Tomato Paste
  • 35g sachet Taco Seasoning use your favourite, I used mild
  • 8 Cherry Tomatoes chopped in quarters
  • 4 Wholegrain Wraps

Instructions
 

  • Add 1 tbsp of olive oil to a large frying pan / skillet and heat over a medium heat. Add the onion and fry until translucent. Add the mince and stir until cooked through.
  • Add the tomato paste, the split lentils and the taco seasoning and cook for another 5 minutes until the lentils have softened, stirring regularly.
  • In the meantime preheat your oven to 180 deg C. Cut your wraps into circles to fit inside 4 small ramekins (covering the bottom and up the sides) to make pie shells. Bake for 4 – 5 minutes until crisp.
  • Fill the pie shells with the taco mince mix. Serve with a fresh garden salad.
