Taco Pies
If you can cook savoury mince then you can cook Taco Pies. Healthy wholegrain wraps replace unhealthy pastry. Taco Seasoning gives the filling a spicy kick and the Red Split Lentils adds fibre to bulk out the mince filling.
Taco Pies
Ingredients
- 500 g Beef Mince
- 1 Brown Onion finely diced
- 1/4 cup Red Split Lentils
- 2 tbsp Tomato Paste
- 35g sachet Taco Seasoning use your favourite, I used mild
- 8 Cherry Tomatoes chopped in quarters
- 4 Wholegrain Wraps
Instructions
- Add 1 tbsp of olive oil to a large frying pan / skillet and heat over a medium heat. Add the onion and fry until translucent. Add the mince and stir until cooked through.
- Add the tomato paste, the split lentils and the taco seasoning and cook for another 5 minutes until the lentils have softened, stirring regularly.
- In the meantime preheat your oven to 180 deg C. Cut your wraps into circles to fit inside 4 small ramekins (covering the bottom and up the sides) to make pie shells. Bake for 4 – 5 minutes until crisp.
- Fill the pie shells with the taco mince mix. Serve with a fresh garden salad.
