QUICK YOGHURT FLATBREAD
With only 2 ingredients this recipe is not only simple…it’s versatile as well.
Use these flatbreads as a wrap for lunch, use to soak up a curry or dip it in a hearty soup. Or make a double serve and take along for your lunch on the road the next day.
Quick Yoghurt Flatbreads
Ingredients
- 1 cup Self Raising Flour
- 1/2 cup Greek Yoghurt
Instructions
- Place the flour in a medium bowl, cut in the yoghurt with a butter knife. Then bring the mixture together into a ball with your hands. Knead the dough lightly until smooth. Let stand for 5 minutes.
- Divide the dough into 4 pieces then roll each piece on a floured surface to about 20cm round.
- Heat 2 teaspoons of oil into a medium fry pan over a medium heat. Add one piece of the dough then cook on one side for 30 seconds or until puffy and golden. Flip onto the other side then cook for a further 30 seconds or until golden underneath. Transfer to a plate and cover to keep warm. Add 2 more teaspoons of oil and dough to the pan to make the remaining 3 flatbreads.
- Serve with ham and scrambled eggs, ham cheese and tomato or use to soak up a good curry.
