Damper

Damper

There’s nothing like a good damper when caravaning or camping. This one has more of a scone consistency as opposed to bread.

Have it for Happy Hour, as a side to your main meal, with maple syrup after your meal, with a cup of tea or for lunch on the road.

Ingredients

  • 340 g Self Raising Flour
  • 50 g Unsalted Butter
  • 5 g Sugar
  • 20 ml Olive Oil
  • 250 ml Buttermilk

Instructions

  • Preheat your oven to 180 deg C.
  • Combine all the ingredients in a mixing bowl, using a knife to mix in.
  • Knead until well combined and slightly sticky.
  • Shape into your desired loaf shape and bake for 30 minutes.
Serve warm with butter or maple syrup.
  • Cheese & Bacon Version:
Add 50g of grated cheese to the mixture prior to baking. Instead of making a loaf shape, roll the dough flat. In the centre add another 50g of grated cheese and 1 cup of diced bacon, as a filling. Roll into a large ‘sausage roll’ shape, then carefully join the edges so the filling doesn’t fall out. Bake for 30 minutes.
