Damper
There’s nothing like a good damper when caravaning or camping. This one has more of a scone consistency as opposed to bread.
Have it for Happy Hour, as a side to your main meal, with maple syrup after your meal, with a cup of tea or for lunch on the road.

Ingredients
- 340 g Self Raising Flour
- 50 g Unsalted Butter
- 5 g Sugar
- 20 ml Olive Oil
- 250 ml Buttermilk
Instructions
- Preheat your oven to 180 deg C.
- Combine all the ingredients in a mixing bowl, using a knife to mix in.
- Knead until well combined and slightly sticky.
- Shape into your desired loaf shape and bake for 30 minutes.Serve warm with butter or maple syrup.
- Cheese & Bacon Version: Add 50g of grated cheese to the mixture prior to baking. Instead of making a loaf shape, roll the dough flat. In the centre add another 50g of grated cheese and 1 cup of diced bacon, as a filling. Roll into a large ‘sausage roll’ shape, then carefully join the edges so the filling doesn’t fall out. Bake for 30 minutes.
