Satay Chicken Skewers

Always a crowd favourite, Satay Chicken Skewers are pretty easy to make. The secret is to marinate the chicken, in your fridge, at least overnight.

You can mix and cook the Satay Sauce at your camp site or make it at home before you leave on your trip. Place the chicken strips in your cryovac bag then add the marinade, then seal using a cryovac machine. This will last up to one week in your fridge.

Eat with rice as a main meal, by themselves for Happy Hour or cold the next day for lunch on the road.

Ingredients
  

  • 1/2 cup Roasted Unsalted Peanuts All I could find was crushed nuts in the supermarket cooking aisle
  • 2 tbsp Red Curry Paste
  • 3/4 cup Coconut Milk Equiv to 180ml
  • 1/4 cup Chicken Stock Equiv to 60ml
  • 1 tbsp Lime Juice
  • 1 tbsp Brown Sugar
  • 2 large Chicken Breasts Sliced into thin strips, lengthwise

Instructions
 

  • Process the nuts until finely chopped. (I put the store bought chopped nuts into a zip lock bag and belted them with a rolling pin. This gave a powdery consistency that mixed in well).
    Add the curry paste and combine well.
  • Add the coconut milk to a medium saucepan and bring to the boil. (Make sure you don’t use a small saucepan as you will need to be able to whisk the sauce).
    Add the peanut / curry mixture and whisk until smooth.
  • Add the stock, reduce the heat and simmer for about 3 minutes or until the sauce thickens slightly.
  • Add the juice and sugar then cook, stirring continuously, until the sugar dissolves. Then allow to cool.
  • Place the chicken strips into a cryovac bag or plastic container. Pour in the cooled Satay Sauce, ensuring the chicken is completely covered. Place in your fridge to marinate, ideally overnight.
  • Soak 12 wooden skewers in water for at least an hour (this prevents the sticks from burning on the BBQ).
  • Thread the marinated chicken onto the wooden skewers. Pour any leftover marinade into a saucepan.
    Place the saucepan on your stove over a medium heat and heat thoroughly. You will need to do this to cook any of the chicken juices in the sauce.
  • Place the chicken skewers onto a BBQ and cook thoroughly.
    Serve with rice for a meal, by themselves as an entree for happy hour or cold the next day for lunch.
