Ingredients
  

  • 1 Onion (chopped)
  • 1 Celery Stick (chopped)
  • Olive Oil
  • 1 clove Garlic (chopped)
  • 100 g Button Mushrooms (finely sliced)
  • 50 g Walnuts (chopped)
  • 175 g Cashews (finely chopped)
  • 1 Egg (beaten)
  • 1 pinch Paprika
  • 1 pinch Dried Thyme
  • Salt & Pepper (to taste)
  • 4 Wholemeal Pita Bread (cut into triangles)

Instructions
 

  • In a large frypan add a little olive oil, onions, celery, garlic & mushrooms, & cook for 5-10 minutes until brown.
  • Remove from heat & stir in the walnuts, cashews, egg, paprika & thyme. Add salt & pepper to taste. Spoon into a ramekin & allow to cool.
  • Preheat your caravan oven to 200 deg C. Place the pita on a baking tray & toast until brown.
  • Serve the Cashew & Walnut Pate with the Pita on the side.

Notes

In caravaning Happy Hour is the time in late afternoon just before the dinner meal. Its very social and fellow caravaners and campers get together for a bit of a chat and share chips, dips and other nibblies. For some its the favourite part of the day.
