Salad Lunch Jar to Go

Here’s an easy and healthy idea for lunch. Simply layer your favourite salad ingredients in a Mason style jar. It’s best to use dry ingredients and make it as colourful as you can.

Place the filled jar in your van fridge, car fridge or cooler bag and screw down the lid to keep fresh.

The jar I used was 450ml in size and available from Coles Supermarket.

Ingredients
  

  • 2 cups Baby Spinach Leaves or Cos Lettuce sliced
  • 1/2 cup Button Mushrooms sliced finely
  • 3 Baby Carrots peeled then grated finely
  • 3 slices Ham or deli meat of your choice
  • 2 Eggs
  • 1 tsp Curry Powder I used Keens
  • 2 tsp Whole Egg Mayonnaise
  • 2 Baby Roma Tomatoes cut in half

Instructions
 

  • In a saucepan cover the eggs with cold water and bring to the boil. Once boiling continue to boil the eggs for 8 minutes, then remove the saucepan from the stove. Fill with cold water to stop the eggs cooking.
  • Once cooled peel the eggs then mash with a fork. Add mayonnaise and curry powder then mix with a spoon until combined.
  • Layer the salad ingredients in the jar, tamping down each ingredient to form a solid layer. I put the tomatoes on the top as they don't layer well.
  • When the jar is full screw on the lid and place the jar in your fridge or cooler bag until ready to serve.
