Low Carb Cottage or Shepherds Pie
Low Carb Cottage Pies are a meal in itself and ideal for a cold night. The cauliflower mash, replacing the more traditional potato mash, helps to make this a low carb version of the classic shepherds or cottage pie.
Make it as a family size or alternatively as 4 individual cottage pies. Have one each for dinner and keep the other 2 take for lunch on the road the next day.
Low Carb Shepherds Pie
Ingredients
- 1 tbsp Olive Oil
- 1 Brown Onion, finely chopped
- 2 tsp Crushed Garlic
- 400 g Mince Beef, at room temp
- 1 Celery Stick, finely diced
- 1/2 Red Capsicum, seeded & finely diced
- 1 tbsp Tomato Paste
- 1 tbsp Worcestershire Sauce
- 1 tsp Dried Basil
- 1 cup Frozen Peas
- Salt & Pepper to taste
- FOR THE CAULIFLOWER MASH
- 400 g Cauliflower, cut into florets
- 1 tsp Crushed Garlic
- 2 tsp Thickened Cream, or milk if you don't have it
- 1 cup Shredded Cheese
Instructions
- Heat the oil in a pan over medium heat. Add the onion, garlic, celery and capsicum then cook for 5 minutes or until softened. Add the mince and cook until browned, breaking up any lumps. Season with salt and pepper to taste.
- Add the Worcestershire Sauce, tomato paste, basil and peas, then cook for another 10 minutes, stirring occasionally.
- Meanwhile, boil the cauliflower in a saucepan until soft. Drain then return the cauliflower to the saucepan. Mash up the cauliflower, add the garlic and stir in the cream until you get a creamy consistency.
- Spoon the meat mixture into one large, or individual sized, ovenproof dishes then top evenly with cauliflower mash. Sprinkle with cheese on top and place under your griller to melt.
- If you don't have a griller you could place in a camp oven with lots of coals on the lid.
- It's a meal in itself.
