Salmon and Chive Quiches
These make a great breakfast, lunch or light dinner treat. Make some extra for lunch on the road the next day.
Salmon and Chive Quiches
Ingredients
- 300 g Smoked Salmon
- 8 Eggs
- 1 tbsp Chives (finely chopped plus some extra for sprinkling on top)
- 1/2 cup Grated Cheddar Cheese (equiv to 50g, go the reduced fat option if you can)
Instructions
- Preheat your oven to 180 deg C.
- Using a non-stick or silicon Texas Muffin Pan, line 6 cases with the salmon. This in effect becomes the ‘pastry’. Whisk the eggs, add the chives and season with cracked pepper.
- Pour the egg mixture evenly into the salmon lined cases. Sprinkle each with the cheese and more chives.
- Bake for 15 to 20 minutes or until set.
Notes
I have a confession to make……I ran out of chives so used finely chopped baby spinach leaves instead. Guess what, it was just as good.
