Meatballs with Tomato Sauce

My goodness this is a really tasty recipe. And a One Pot Wonder as well, so not as much cleaning up afterwards.

Ingredients
  

For the Meatballs

  • 200 g lean Minced Beef (or pork, or veal, or even chicken mince)
  • 1/2 small Onion (finely chopped)
  • 1/2 tsp Dried Oregano
  • 2 tbsp Flat-leaved Parsley (chopped)

For the Tomato Sauce

  • 1 tbsp Olive Oil
  • 1/2 small Onion (finely chopped)
  • 2 cloves Garlic (crushed)
  • 400 g Tin of Diced Tomatoes
  • 1 tsp Dried Oregano
  • 1/2 cup Beef Stock (salt reduced variety…if you can find it)
  • 2 tsp Balsamic Vinegar (gives it a really nice kick)

Instructions
 

  • To make the meatballs, combine all the meatball ingredients in a bowl. Using wet hands, roll into small meatballs, about 16 in number.
  • To prepare the sauce, heat the oil in a frying pan over medium heat and cook the onion & garlic, stirring for 5 minutes or until softened. Add the tomato, oregano, stock & balsamic vinegar & bring to the boil. Reduce the heat & simmer for 10 minutes.
  • Add the meatballs to the pan & simmer a further 10 minutes or until the sauce has thickened & the meatballs are cooked through.
  • Place 4 Meatballs on each plate then spoon over the Tomato Sauce.
    Serve with cooked pasta or a salad.

Notes

Don’t be afraid to use dried or packaged ingredients rather than fresh. Especially if you are on the road and fresh ingredients are hard to find. Some options include: Dried Onion Flakes instead of cutting up fresh onions; crushed Garlic in the jar or tube; parsley in the tube rather than buying a whole bunch. It can be a lot more convenient that way.
