Fish Tacos with Fresh Tomato Salsa

Ingredients
  

For the Fish Tacos

  • 1 cup Cornflakes
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • 1 pinch Cayenne Pepper
  • 1/3 cup Flat-leaved Parsley (finely chopped. I found little sachets of already chopped parsley in the vege aisle at my local supermarket. No mess and they last for 4 weeks).
  • 1/2 cup Breadcrumbs
  • 1 Egg
  • 400 g Firm White Fish Fillets (boneless, skin off, cut into small fingers. I used Ling)
  • 4 Taco shells (I used the soft Stand & Stuff Taco shells. Less mess that way. If you use the mini ones you may need 12)

For the Fresh Tomato Salsa

  • 4 Tomatoes (finely diced)
  • 1 small Red Onion (finely chopped)
  • 1 clove Garlic (crushed)
  • 1/4 tsp Tobasco Sauce (or to your taste. I have cut this down by half from the original recipe)
  • 3 tbsp Lime Juice
  • 3 tbsp Chopped Coriander (you can get this already finely chopped in sachets in the vege aisle of your local supermarket, & they apparently last 4 weeks)
  • 1/2 tsp Ground Coriander
  • 1/2 tsp Ground Cumin

Instructions
 

For the Fresh Tomato Salsa

  • Make this first.
  • Combine all the Salsa ingredients in a bowl then set aside to allow the flavours to infuse.

For the Fish Tacos

  • Preheat the oven to 190 deg C. 
  • Place the cornflakes in a large zip-lock bag, seal & lightly crush with your hands to form large crumbs. Add the dried herbs & spices, parsley & the breadcrumbs to the bag & shake to combine. Pour the crumb mix into a wide shallow dish.
  • Beat the egg & the oil in a shallow dish. Dunk the fish pieces in the egg mix, then cover them with the crumb mix to coat evenly. Shake off the excess crumbs & place the fish pieces into a baking tray. Bake the fish for 20-25 minutes or until golden & cooked through.
  • Serve with the Cos lettuce, Fresh Tomato Salsa and the Taco shells or wraps.

Notes

I know this is a bit fiddly but it’s worth the effort. 
If you don’t have an oven you could buy hot Fish Cocktails from the corner Fish & Chip shop, and still make the Salsa.
