Sweet Potato Shepherds Pies
A healthy twist on a classic dish using Sweet Potato. It’s really tasty and will please the fussiest of eaters.
Sweet Potato Shepherds Pies
This recipe takes awhile, time-wise. But boy is it tasty!
Ingredients
- 1 tbsp Olive Oil
- 1 Onion (finely chopped)
- 2 cloves Garlic (crushed)
- 400 g Lean Minced Beef (Get your butcher to cryovac this before you go. It will last longer in your fridge that way).
- 2 Carrots (finely diced)
- 2 tbsp Tomato Paste (Use the sachets. It’s much simpler and less wasteful)
- 1 1/2 cups Beef Stock (Ideally the salt reduced variety if you can get it)
- 1 tbsp Worcestershire Sauce
- 1 tsp Dried Basil
- 1 cup Peas (Fresh, frozen or dried is OK. But not the minted ones. They taste like crap).
- 1 tsp Cornflower (To thicken the mix. You may not even need this. I didn’t. Your call).
- 500 g Sweet Potato (Cut into chunks)
- 1 tbsp Low-fat Milk (I used Lite White).
- Freshly Ground Pepper (To taste).
- Olive Oil Spray
- 2 cups Steamed Broccolini (Or green beans if you can’t find any broccolini).
Instructions
- Preheat the oven to 180 deg. (This is used towards the end of the recipe to put a little bit of a crust on the mashed sweet potato. Do you need to? Not really).
- Heat the oil in a pan over medium heat. Add the onion & garlic, stirring for 5 minutes or until it starts to soften.
- Add the mince & cook until browned, breaking up any lumps. Add the carrot, tomato paste, stock, Worcestershire Sauce, basil & peas. Bring to a simmer & cook for 20 minutes or until the veges are soft. Mix the cornflour with a little water & add to the pan (if needed for thickening), stirring until thickened.
- Meanwhile, place the sweet potato in a saucepan with just enough water to cover. Bring to the boil, then reduce the heat & simmer for 15-20 minutes or until cooked through. Drain well, then mash with the milk & season with the pepper.
- Spoon the meat mixture into 4 oven proof dishes & top with the sweet potato.
- Spray with olive oil & bake for 20-30 minutes or until lightly golden (this is a nice to not a must do. It will taste the same without this step, so don’t stress if you don’t have an oven).
- Serve with the steamed greens.
Notes
If there only 2 of you, congratulations! You have just made tomorrows lunch as well. Serve it cold with a salad.
You could add some curry powder OR a little chilli powder to the meat mix to give it a bit of a kick.
