Butter Chicken
This has got to be one of my favourite recipes. It takes a little preparation beforehand but well worth the effort.
I make the marinade at home before I leave for my caravaning adventure. You can do one of 2 things. Either just add all the dry marinade ingredients to a large ziplock bag (which will save the hassle of carrying all the individual spices). Or alternatively, do what I do. Make the marinade and add to the chicken at home, then cryovac them together and put in your van or vehicle fridge. Then it will be ready to cook when needed.
Butter Chicken
Ingredients
- MARINADE
- 1/2 cup Plain Yoghurt (I use Greek Natural Yoghurt)
- 1 tbsp Lemon Juice (I use the prepacked lemon juice from the supermarket because it’s easy)
- 1 tsp Tumeric Powder (how very hip LOL)
- 2 tsp Garam Masala
- 1/2 tsp Chilli Powder (add 1 tsp if you like chilli)
- 1 tsp Ground Cumin
- 1 tbsp Grated Ginger (I used the prepacked stuff in the jar)
- 2 tsp Crushed Garlic (again the prepacked stuff in the jar)
- 750 g Chicken Thigh Fillets (cut into bite size pieces)
- CURRY SAUCE
- 2 tbsp Oil
- 1 cup Tomato Puree
- 1 cup Pouring Cream
- 1 tbsp White Sugar (I used caster sugar)
- 1.25 tsp Salt
Instructions
- Combine the marinade ingredients with the chicken in a bowl. Cover & refrigerate overnight or for a minimum of 3 hours.
- Heat the vegetable oil over high heat in a large pan. Take the chicken out of the marinade, place the chicken into the pan & cook for around 3 minutes or until the chicken is white all over.
- Add the tomato puree, cream, sugar & salt. Turn the heat down to low & simmer for 20 minutes. Taste to see if it needs more salt.
- Garnish with coriander & serve with basmati rice.
