Speedy Mince Gnocchi Bake
A different way to serve a pasta and savoury mince dish. Cut down on the cheese for a more healthy alternative.
If you make this in individual dishes it’s easy to take some on the road for lunch the next day.
Speedy Mince Gnocchi Bake
Ingredients
- 500 g Fresh Gnocchi
- 1 tbsp Vegetable Oil
- 1 Onion (finely chopped)
- 1 tsp Crushed garlic (equivalent to 1 clove)
- 500 g Mince (I used beef)
- 1 Carrot (peeled & grated)
- 1 tsp Tuscan Seasoning (yes there is such a thing)
- 500 g Tomato Pasta Sauce (I like to use the Jamie Oliver one that has chilli in it, for a bit of a kick))
- 1.5 cups Grated Mozzarella
- Mixed Salad leaves to serve
Instructions
- Cook the gnocchi according to pack directions. Then drain.
- Meanwhile heat the oil in a pan over medium-high heat. Add the onion & garlic. Cook stirring occasionally until soft.
- Add the mince, carrot & seasoning. Cook stirring to break up any lumps in the mince, for about 5 minutes or until browned. Add the pasta sauce. Bring to the boil then remove from the heat.
- Transfer the mince to an oven proof dish, top with the gnocchi & sprinkle with cheese.
- Cook in your oven at 220 deg C for about 10 minutes or until the cheese is golden brown.
- Serve with salad leaves on the side.
Notes
I used individual enamel oven proof dishes so everyone has their own dish. I’ve found that to be popular in our family. In that way I can also have smaller dishes for those in the family that eat less than others.
