Ingredients
  

  • 4 Ham Slices (large & thin)
  • 20 g Baby Spinach Leaves
  • 1/4 cup Grated Cheese
  • 4 Cherry Tomatoes (sliced thinly)
  • 1 tbsp Chopped Fresh Chives
  • 2 Eggs
  • Thick cut toast to serve

Instructions
 

  • Preheat your oven to 180 deg C.
  • Oil two enamel mugs, metal cups or a Texas Muffin pan.
  • Press the sliced ham into each mug to line the base & sides. Press the spinach into the mugs, sprinkle with the cheese & chives. Crack an egg into each mug & season with salt & pepper.
  • Cover with Alfoil then place the mugs in an oven. Cook for 8 minutes or until egg whites have set & yolks are cooked to your liking.
  • Serve with thick toast.
