Sausage and Cherry Tomato Bake
The only word to describe this Sausage and Cherry Tomato Bake is …TASTY! You could cook this without an oven if you like, just continue on the stove without the lid on to thicken up the sauce a little. The oven just melts the Feta a little but it’s not crucial to the recipe. It’s probably also quicker cooking on the stove top as well.
Sausage & Cherry Tomato Bake
Ingredients
- 1 1/2 tbsp Extra Virgin Olive Oil
- 6 Thick Sausages
- 1 Red Onion cut into thin wedges cut into thin wedges
- 1 Red Capsicum de-seeded & chopped
- 2 tbsp Rosemary leaves chopped
- 2 400g cans Cherry Tomatoes
- 1 tbsp Brown Sugar
- 1 tbsp Red Wine Vinegar
- 1 pinch Chilli Flakes
- 80 g Feta crumbled
- 1/2 cup Fresh Basil Leaves
Instructions
- Preheat your oven to 200 deg C. On your stove top heat the oil in a large ovenproof pan over a medium heat. Cook the sausages for 5 minutes, turning regularly. Transfer them to a plate when cooked.
- Add the onions, capsicum and rosemary to the pan and cook, stirring often, for 5 minutes. Add tomatoes, sugar, vinegar and chilli and bring to the boil. Return the sausages to the pan, then transfer the pan to the oven. Bake for 30 minutes or until the sausages are completely cooked and the sauce has thickened,
- Scatter the feta and basil over the pan and serve with rice or risoni.
