Here’s a cooked breakfast in a cup… in only 12 minutes.
Ham & Egg Breakfast Cups
Ingredients
- 4 Ham Slices (large & thin)
- 20 g Baby Spinach Leaves
- 1/4 cup Grated Cheese
- 4 Cherry Tomatoes (sliced thinly)
- 1 tbsp Chopped Fresh Chives
- 2 Eggs
- Thick cut toast to serve
Instructions
- Preheat your oven to 180 deg C.
- Oil two enamel mugs, metal cups or a Texas Muffin pan.
- Press the sliced ham into each mug to line the base & sides. Press the spinach into the mugs, sprinkle with the cheese & chives. Crack an egg into each mug & season with salt & pepper.
- Cover with Alfoil then place the mugs in an oven. Cook for 8 minutes or until egg whites have set & yolks are cooked to your liking.
- Serve with thick toast.
