Tasty Taco Bowls
A fun alternative to the normal messy tacos…and a lot easier to eat as well!
Tasty Taco bowls
Ingredients
- 1 tbsp Olive Oil
- 1 Onion (finely chopped)
- 500 g Lean Mince (I used a mix of pork & veal)
- 1/4 tsp Chiili Powder (more if your game)
- 400 g Bottle of Tomato Pasta Sauce
- 4 pieces Wholemeal Mini Mountain Bread (the round ones)
- 2 cups Low-fat Natural Greek Yoghurt (to serve – an alternative to using sour cream)
- 3 Mini Lebanese Cucumbers (diced finely – to go in the yoghurt)
- 1 Baby Cos Lettuce (shredded)
- 1 punnet Cherry Tomatoes (diced)
- 1 cup Grated Tasty Cheese
Instructions
- Heat the oil in a fry-pan over medium heat & cook the onion for 5 minutes or until soft & translucent. Add the mince, garlic & chilli powder. Cook for 5 minutes breaking up any lumps. Add the pasta sauce, bring to a simmer & cook for another 20 minutes, until mince all cooked through and the mix has thickened.
- Meanwhile, preheat your oven to 180 deg C. Spray 4 small ramekin tins with cooking spray then press a mini mountain bread round into each tin. Bake 4-5 minutes or until crisp. This will make one taco basket for each person. Make more if you wish.
- Dice the baby Lebanese cucumbers & mix into the yoghurt. Shred the lettuce. Place the yoghurt mix, the shredded lettuce & the grated cheese into individual small serving dishes. Pop them in the middle of the table.
- Fill the baskets with mince mixture & serve.
Notes
Make extra & you could eat these for lunch the next day.
